Slovenian Strudel Macaron

Inspired by Borovničev zavitek s skuto — a traditional Slovenian strudel with curd cheese and blueberries. This macaron recreates the dessert with creamy ricotta and blueberry ganache, fresh berry flavour, gentle curd cheese/yoghurt acidity, and a thin crispy wafer centre inspired by delicate strudel pastry. The crispy layer combines homemade gluten-free feuilletine, white chocolate, yoghurt and freeze-dried blueberry.
