Kinder-style macaron filling is a flavour that feels familiar, comforting, and easy to love, but presented in a more refined, professional way.

The idea comes from Kinder chocolate by Ferrero, known for its classic combination of milk and white chocolate. In this recipe, that flavour is recreated using two ganaches: a soft white chocolate ganache with vanilla and a richer milk chocolate ganache.

The white chocolate ganache gives lightness and a creamy texture. It is smooth, soft, and delicate. The milk chocolate ganache adds more depth, a slightly caramel taste, and a fuller flavour. Together, they create a balanced filling — not too sweet, but very recognisable and pleasant.

The key feature of this filling is the double ganache swirl technique. Two ganaches are piped together, so you get both flavours in one bite. It also creates a beautiful visual effect and a more interesting texture.

The final texture is: — smooth and silky — stable and easy to pipe — soft and creamy when you eat it
